This month, the visit to the Cava Centre includes a tasting of Mercat Reserva Brut Nature Special Edition cava, aged for at least 18 months and made with the Xarel·lo and Pinot Noir varieties. The latter gives it the touch of elegance that marks the difference, because of the use of red grape vinified in white wine.
Molí Parellada was founded in 1987 as a small family winery in Sant Sadurní d'Anoia. Currently, they continue to make their own wines and cavas according to traditional methods but incorporating the latest technologies in new facilities located in a flour mill built in 1783.
